Vegetables are so important, but can be hard to prep for those of us with chronic illness and disability. They can also be expensive.

As I work to heal my body as much as possible with diet, I have found a few things that make it easier and more cost-effective.

  1. Purchase produce in season to freeze for the year.
  2. Bake any vegetables you can before you try to cut or peel them.
  3. Buy the raw vegetables pre-cut as much as you can.
  4. Use the frozen or canned vegetables for snacks as well as meals.
  5. Prep vegetables on the weekend for the week to have them readily available.

These things help me stay on track with my vegetable (and fruit) intake while not overwhelming my physical and financial resources.
